Super Seed Muesli Bars (Nut Free)


  • 1 cup rolled oats

  • ¼ cup sunflower seeds

  • ¼ cup pumpkin seeds

  • ¼ sesame seeds

  • 2 tbsp. chia seeds

  • ½ cup shredded coconut

  • 1 tsp vanilla essence

  • 1 tbsp. coconut oil

  • ½ cup rice malt syrup or honey


  1. Preheat oven to 160C.

  2. Mix oats, seeds and shredded coconut in a bowl and set aside.

  3. On stove top or in microwave, add coconut oil, honey and vanilla and bring to the boil (watch not to burn), then remove from the heat.

  4. Pour hot mixture onto the other ingredients and mix until well combined.

  5. Press firmly into a lined 20cm x 20cm tin.

  6. Pop the bars into pre-heated oven and bake for approx. 25 minutes or until starting to turn golden brown. For a chewy consistency, take out earlier, for a crispier crunchy consistency, let it cook the full time.  Keep in mind, all ovens are different, so heat may vary. The key is….You want to take them out when they are perfectly golden, before they get too dark.

  7. Remove from oven and allow to cool COMPLETELY on tray before moving them. This allows them to set.

  8. Cut up into bars and then store in an airtight container.
